Question About Refrigerating Fondant Covered Cakes

So I know that it's not recommended to refrigerate fondant covered cakes, but what if that cake has a filling that needs to be refrigerated? Any tips or ideas?
I just took a wedding cake class (that was really fabulous) with Minette Rushing in Savannah Georgia. They only do fondant cakes. They refrigerate ALL of their cakes prior to delivery. We covered our cakes then refrigerated them until we were ready to decorate. I had always been told not to refrigerate. I think everyone does things differently...
I just had the same question and I had decided to try and see what would happen. My cake turned out perfectly! It did have a little condensation but it evaporated quickly and did not ruin anything on it.
