Quick Question...the Oven's Preheating

I started to mix my cupcakes last nite so I opened the cake mix and put it in a bowl. The baby started crying and by time he got to sleep it was to late to bake so I covered the cake mix (completely dry no other ingredients added) and left it on the counter overnite. My question is should I still be able to use it? Is it ok? I don't have bugs or anything like that. What do you think?

i and others have held FULLY mixed up batter in the fridge overnight.

Perfectly fine -- just like leaving flour or sugar out in a canister on the counter.

Whew...thanks Doug and Poohsmomma! I don't have any more yellow mix and hubby put my van in the shop for service so I was going to be SOL! Thanks again!

My question would have been "Why COULDN'T you use that dry, unmixed mix?" icon_confused.gif There's nothing in it to spoil, you said it was covered and no chance of little crawly critters getting to it.

So why NOT?
