The recipe I have for Italian Cream Cupcakes calls for unsweetened coconut and I can't find it in any of the stores around here- only sweetened.
I have an order for Sunday for the cupcakes....can I use the sweetened and and reduce the sugar, or leave the sugar the same and just use the sweetened coconut? (recipe calls for 2 cups sugar, 2 cups unsweetened coconut) I was thinking 1.5 cups sugar....I never bake with coconut really since I don't care for it so I have no clue how sweet it is or how it would affect the taste.

I have seen unsweetened coconut at health food stores that carry organic items. If not, I would add the sweetened coconut and not change a thing.
