Hello Everyone,
I wanted to try a Red Velvet cake recipe, however I wanted to use beet juice instead of red food colouring. My problem is that I cannot find any beet juice anywhere that is not pickled! I live in London Ontario Canada and I have search the surrounding area for this stuff! Does anyone know where I can find un-pickled beet juice?

One of my carrot cake recipes calls for baby food carrots, so I bet this would work!
my s-i-l just makes her own from cooking down strained beets--then she freezes the juice/syrup in ice cube trays and says that the longer it's frozen the more bright the color goes. I haven't tried it before but she's a big fan of it!
I love canned beets. Here in the US you can buy them in their own juice (not pickled). They are great in salads.
