I'm making a lemon cake and I'd like to include a lemon cream cheese filling in between the layers. Can anyone recomend one that doesn't need to be refridgerated? I'm covering the cake in fondant, so it can't go in the fridge. I've got some lemon curd and also some lemon tarte filling if that helps at all...

I'm pretty sure that anything with cream cheese would need to be refrigerated. I guess it just depends on the amount of cream cheese in the recipe.

If it were me, I'd use lemon curd or mix in in with some buttercream, or maybe find a cream cheese icing that doesn't need refrigeration.

You could also take some Bettercream and whip it with some lemon pudding mix or cheesecake pudding mix (or both!) and add some lemon extract to it. Just another idea...
