I have tried to use the diamond impression pattern before only to have the buttercream frosting stick to it. I have an order for a cake this week with the diamond pattern. Any words of wisdom to get better results?
Is this a BC or fondant iced cake?
Make sure your cake is well-crusted. I wipe the mat off between every impression too. that way, if something did stiff, it won't become worse.
Try dusting the mat with sornstarch and wait until the icing has crusted.
Most likely, I have the same mat and even though my bc had well crusted, I had the same issue. I resolved it by lightly dusting the mat with ps each time I applied it to the surface of my cake. It worked perfectly and the ps simply was absorbed into the bc.
