I made butter cream last Saturday and put the left overs in a bowl and covered with plastic wrap. Is it still good? I use Hi ratio and butter. I just need enough for a dam for my filling. I will be using ganache to frost the cake. TIA.

It sure is !
You can keep buttercream out on your counter till you use it up with no problem!

I always make my buttercream several days ahead of my cake being due just to get it out of the way!
You can also freeze it if you have any left..

Thank you fiddlesticks. I wasn't sure if it would be ok after a week in the fridge. Really didn't want to hastle with an entire batch just to make a dam for filling.

As long as American buttercream is wrapped up tightly (so it doesn't take on any fridge odors/flavors), it'll be good for at least a month in the fridge, probably longer. icon_smile.gif
