Shalott, which icing in particular are you referring to when you say that it crusts like meringue? I believe THAT is the recipe I have been searching for years to find. My grandmother used to make it for every holiday and celebration and somehow the recipe ended up 'misplaced' after her passing. My sister and I have searched but can't seem to find the right one. Your description sounds a lot like the post-spreading consistency. Hers was also tinted the slightest pink, always, but I suspect that may have just been a drop or two of red food color.
YEARS of searching these sites to try and find a recipe like my grandma's and this is the first time I have ever seen a post about the icing being pink, like my grandma's was! Yay for awesome grandmas with pink iced cakes :) Please let me know if you have found the recipe! I bet it's the same...
