When placing the longer dowel through the center of the cake... if it's sharp will it go through the cardboard with a little pressure or do I need to cut holes in the cardboard?
The first time is scary but it does go right through. a couple light taps with a hammer is all it takes.

I use foamcore boards under my cakes and the dowel goes through them with no issues at all! I have also doweled styrofoam dummy cakes as well.

Where can you get foamcore boards for purchase?
Michaels has the thick ones that I use. You can also buy those in bulk as well.
