To me it is like a defective car- don't you think a company should test everything before they ship it? Sure a "bad batch" won't kill anyone but it won't help your customer base.

Me too! I used Satin Ice on my first wedding cake a month ago, because I didn't want to take a chance on MMF (usually it's good, but not 100% of the time), plus the last time I used SI, it was all right. Well, it was brutal! It rolled out perfectly smooth and I immediately put it on the cake and as soon as it covered the edges (square cake), it started tearing! (Corners too). I used so much shortening to hide obvious tears, but you can still seem them close up. Nice "shiny" cake! Three layers like that! So stressfull, it being someone's wedding cake!! It's totally a relief that it wasn't just me! I think I'll go back to marshmallow fondant.

I have used "Duff" (Duff Goldman - Charm City Cakes) brand, and it worked really well, but it was twice as much as SI. Ouch. MMF it is.

I had a similar problem about a month ago on my busiest weekend, July 4th. I have been a Satin Ice user and never had problems in the past. But, this weekend every time I tried to cover a cake the fondant stretched, tore, had elephant skin. I covered and recovered with no better results. Lucky for me all my cakes were white so I filled in all the cracks with powdered sugar. I was so stressed because all the cakes were wedding and 16th birthday cakes, all very special moments and I didn't want to spoil anyone's day. I had no choice but to use the Satin Ice because I was booked and didn't have time to make MMF. Anyway, I emailed Satin Ice and told them what I just said and they quickly wrote me back and asked for fondant batch #'s, my name and address. A couple days later UPS arrived with a new bucket of 20lb white Satin Ice fondant. I emailed them back thanking them for their quick response and that's when they told me of their equipment change which forced them to change the recipe a bit also. But, I was happy they admitted their fault and tried to right a wrong. I have been a bit scared to use Satin Ice since so the free bucket they sent plus the one I ordered still sit unused. Going to try it this week though can't keep making my own MMF.

I've used Satin Ice for the past two years, and never had an issue until now. For the past three or four months, the Satin Ice has been very difficult to work with. The wrinkles (elephant skin look) occurs with every batch, and it dries out quickly. I go through a lot of Satin Ice in my bakery, and it is getting very difficult to cover up the flaws. It isn't a user problem because my staff is excellent with fondant. We've given it chance after chance, and if the quality doesn't improve, I will have no choice but to start using another brand. As of now, I won't cover a wedding cake with it and will only use it for the bakery's sculpted designs.

I am so thankful for this website and this thread!! Such good, useful information! Thanks everyone! I think I'll wait awhile before buying SI again and only use it on a cake for my family or something. (just in case)

I have lots of problems with this fondant too. It went sticky when I put it on a cold cake and then cracked. Next time I used it I left the iced cake out on the counter then covered it and it did not stick well to the cake. Very frustrated with it. I think I will go back to MMF  for covering the cakes and use the store bought stuff for decorations.
