Hi everyone! I have searched and searched this site like crazy and I cannot really find a true answer on how to make sugar ice cubes. I found a few people saying they did 50/50 sugar and corn syrup, but does it need heated a special way? If I pour it into ice cube trays (that is the size I want), do I have to line the trays with something? How do I cool them? Open air, freezer, fridge? How long do I cool them for? How do I remove them? Will they be completely hard or still be somewhat soft?
Any advice you can give would be greatly appreciated! I am losing my mind trying to figure out how to do this!
Thank you in advance!!
Kim
Here's a link to a post I started recently about using isomalt to make ice cubes.

I used Wilton's silicone bite-size brownie pan for the ice cube shape.
Hope this helps!
