Cake Extender??

This is probably a stupid question so please no laughing....... but after reading different posts I have been seeing "cake extender" what exactly is that??

The cake mix extender makes your cake taste much better. Ever since I tried it about a month ago, I will never go back to just a "naked" box mix ever.

I use sour cream, but would like to try yogurt one day.

This recipe really does make the cake so much better. I have used sour cream and vanilla yogurt. I like them both, but I will probably do vanilla yogurt again. YUMMY!

How many cups does the cake extender recipe add to your cake mix?

I used it for the first time yesterday for my sons BD cake. Typically I have used naked mixes in the past but never again. My experience is that 1 box mix will "do" a character pan, but not quite, theynever quite raise to the top.

The extender gave me more mix to fill the pan more (about 2/3) which let it raise over the sides slightly. Als0 enough to fill 2 of my round 4 inchers that I freeze to "play" with or to do tastings. And SOOOOOOOOOO moist.
I used sour cream because I was not sure about fat free yogurt, and didnt have lemon extract so used the conc lemon juice you buy in the bottle and it was great.

I use the enhanced recipe, the recipe does not call for extract but I add it anyway, eg. Butter Pecan, Rum, Orange ect...using these extracts when I make a yellow enhanced cake. this is the link for the ENHANCED VERSION.

I will NEVER bake a scratch or plain box mix cake again, this is wonderful.

Question about the cake extender recipes:
which brand of flour (all purpose) do you usually use? and can you use what ever flavor of extract you like?

I use the Gilt Edge Brand, a delicate flour for cakes, cookies, ect. I get it in bulk at a little country Amish ran food store. I imagine all purpose would be fine, or your could make your own. One cup sifted cake flour can be substituted with 3/4 cup (84 grams) sifted bleached all-purpose flour plus 2 tablespoons (15 grams) cornstarch.

I've used the enhanced cake mix recipe here and loved it. BUT if I want just a few extra cups of batter to top off my pans, and by that I mean enough extra to bring the height up some, I will use a Jiffy cake mix. I've used the white many many times and the yellow and choc too. It's the fastest way to extend the batter and tastes very good. I add the ingredients called for for both mixes and it always comes out perfect. Doesn't make a much denser cake either. Another thing I do with the Jiffy's is to add a yellow Jiffy mix to my cornbread mixes for a light cakey type cornbread. Yum!

I think I am going to have to try this. I just made a 12x18 cake and used 3 mixes . I would have loved the extender on it just to make it come up a little higher.
