how thick is your buttercreme thin or med when filling in patterns? canyou do this with piping gel and freeze it the same way?

I always use thinned buttercream when filling in patterns. I also think piping gel works great! However...I never freeze my decorated cakes. I am too afraid the decorations will get messed up when the cake thaws out.
