i should have been more specific - i did add 1 tsp of Wilton no-taste red to a single batch, but since this cake will need to serve 80 i was concerned about adding so much coloring... plus i have always used gel or liquid so i also wondered if a powder would be better???

What about using a cherry extract? I used Strawberry extract to color my red frosting this weekend, and it was a fabulous red for a change with a slight strawberry flavor. Not sure how it would work on a cake, but it may enhance the flavor.
