Can someone tell me if it is OK to freeze Sam's but'r'creme? If it is OK, is there a preferred way to do it? Thanks for the help.
definitely..it freezes beautifully. I like to stick it in gallon ziploc bags, get all the air out and then I throw several of those bags into a plastic storage container with lid. In each bag I put about 6 cups of icing (what a normal batch would make) and then I can just take out however many I need.
I don't freeze them like this much anymore (since I go through 3 of the 28lb. buckets a week now!)...but i still freeze colored icing right in the piping bag (I remove the tips) and throw them in a ziploc and freeze, then take out couple hrs. before decorating to thaw, whatever is unused goes back in the freezer. I haven't noticed ANY difference in taste OR texture. It's also a great way to not WASTE the icing once you've reached that perfect color (especially w/ red and black and navy blue, which I use a LOT of!)
