What color(s)should I use to achieve a Off White Buttercream color?

If you use brown vanilla instead of clear vanilla, it will make your buttercream an off-white color icon_biggrin.gif

IMBC comes out ivory because of the butter, or you could just use butter instead of Crisco (or 1/2 and 1/2) in your regular recipe. Just remember that butter behaves a little differently as it has a lower melting point.
