It's possible - but be prepared for arm ache! I used my handheld for the first batch I made (before I got my kitchenaid) and it turned out fine but it does take a good 10 minutes of constant mixing while the temperature comes down so it's hard going with a hand held. Also be careful you don't splash yourself with the hot sugar when you pour it in.
