I need an really really really really good red velvet recipe that is sturdy enough to be used for a wedding cake. I was wondering if anyone had opinions on the ones posted on this site.

Thanks for the help.

Hello,

I made the following red velvet recipe for the holidays and it was a big hit! The cake is sturdy, you just have to give it time to cool completely before handling..also, after you remove from baking pan and cake cools completely, put it in the refrigerator for 1/2 hour to 1 hour and the cake will surely be sturdy to handle. go to www.foodnetwork.com and try paula deen's red velvet cake recipe... best of luck!

I have received nothing but compliments on the RVC I have submitted to the website (called Sarah's red velvet) The recipe indicates to use 9" round, but I only do that when I double the recipe...it's a scrumptious cake!

I used Duncan Hines Red Velvet Cake Mix. I followed directions exactly, & let both layers of cake cool in pan on wire rack for 10 min. I went to get the first layer out & all it did was crack into peices, as for the second layer it was fine.

Why is Red Velvet Cake harder to make than other cake mixes?

I always use the D.H's Red Velvet...I haven't had any problems. I even use it in stacked cakes etc. I add an extra egg. I read that somewhere...that it helps to make it more dense .
Truly I haven't had a problem with it. Sorry you did. Try baking it longer..and I do let it sit in the pan for about 20 mins then I let it sit over night or at least a few hours before I go to move it.
Good luck.

My 1st Wedding cake was a RV cake. As long as you cool the cakes after baking, like one of the previous members said, you should be ok.

BTW, I think it's in my photos.

That's what I use. Works great.

The only problem I ever had was when I dropped one on the floor from the cooling rack and it was 10:30 at night and I had to run to get more mix and my floor was red and yucky and I had to clean it up before I could finish the cake.... icon_cry.gif

But that's because I was a klutz, not because of the cake! icon_rolleyes.gif
