I am doing a large chocolate wedding cake and I have to do it 3 days in advance. Do I keep it in the refrigerator?

Do you mean you have to have it COMPLETED three days in advance? or Do you have to bake it three days in advance? icon_confused.gif

I have to be finished with it 3 days in advance. Will the icing be okay?

I'd keep it in the fridge if you can, but yes it will be fine.
