I have to make 2 dozen cupcakes by friday, and I was gonna bake them tonight, but how do I freeze them to have them ready by Thursday night to decorate?
I freeze mine in a covered box wrapped in plastic wrap.

I did a freezing experiment a few days ago. I made cupcakes frosted them and put sprinkles and even fondant decor on some and just put them in a bakery box and put them in my deep freeze, today 3 days later I took them out and they thawed perfectly no bleeding or anything, since I have tons on cupcakes for graduations I am going to be doing this tomorrow so they are all ready by this weekend! I think If I was going to freeze them for a longer period of time I would wrap in plastic wrap too.
I usually freeze mine undecorated wrapped and in a tupperware container. I would love to freeze decorated, but I am a chicken, don't want to do all that work and then have a flop! So.....I'll give it a try.
I know that is just what I thought!! I had leftover cupcakes from this weekend and had to give it a try, I can't believe how well it worked!! I would give it a try see how it goes!!
When I worked at the grocery store bakery we froze fully decorated cupcakes all the time.
If you are only freezing for a short time and don't need your muffin tins in between, you can freeze them in the tins. After baking, cool, put a sheet of wax paper over the cupcakes, and slide into a 2 gallon size ziploc, stick in your freezer. Pull out and decorate (no need to thaw first).
I bake cupcakes two days a week and freeze them, taking out a set number each day so they can be in my freezer for up to 3 days, sometimes even longer. I have also frozen them iced and had no issues. I just stick the unwrapped cupcakes in the freezer until the icing hardens and then wrap them tightly. I take the wrap off as soon as I take the cupcakes out of the freezer. They taste no different than the cupcakes made the same day.
