Can You Refrigerate Fondant Covered Cakes?

If the venue is air conditioned there's no reason for them to put the cake in the fridge. Can't they just set it on the cake table and leave it till the reception?

But if they can't, just make sure they take it out a couple of hours before the party so it has time to come to room temp and the condensation has time to dry.

I am from Singapore, hot and humid.

My fren put my fondant cake into the fridge by mistake and it came out weepy.

I see cake shows on TV and commercials bakeries put their creations into the fridge with no problem, wished we could do that here.

AWould you consider 27F freezer temp or fridge temp? I'm planning to cover my fondant cake under this temp to decorate two days later and wonder if it's a good temp. Cheese frosting is involved.

AI had the worse experience when I refrigerated my fondant baptism cake. After I took it out of the fridge it set for a little bit and I go and look at it it got 2 huge air bubbles . I say no to the fridge.

AIf I take my fondant cake out of the fridge and out it into the car to go to dinner an it's a hour drive and we will have the heat on will it affect the cake

I have also had a problem with Satin Ice fondant cracking. I just had one today that cracked down the side when I delivered it. I filled the crack with buttercrream, but still made me upset.  I have a couple of big cakes coming up and I need for the fondant to stay soft, because it is going to take aot of hours to make them. Any advice?

AI was reading this thread and wondering the same thing! None of the fillings I make are nonperishable: SMBC, puddings, mousses, fruits. I make everything from scratch, also, and I was trying to figure out a nonperishable filling for a cake for a party I have to deliver Friday but wont be used until Saturday, and I was stumped! Nancy
