I went to a wedding a while back and the cake was absolutely awesome. It was from a bakery and was BC. The icing was delicious and was so smooth it looked like it had been poured over the cake. FLAWLESS! The edges were rounded to look more like fondant. I went on the bakery's website and it says they use Old Fashioned Buttercream. I guess my questions are:
1. What might this Old Fashioned Recipe be?
2. How did they make it sooooo beautifully smooth and perfect?

I know it is a bakery and they know cool recipes and tricks, but someone must know how to make it look so flawless. I don't think they used a hot spatula. I would geuss they had a secret method. Any suggestions?

From what I understand there are several different methods to get it looking that way. Last night I tried using "Viva" paper towels, and with more practice, it could become perfect. I've heard people mention Melvira method too; but I haven't looked it up yet. I know you should use a crusting buttercream.

They may have cut the edges off with a sharp knife. or they may have iced it with the upsidedown icing tchnique. That technique is posted here. Or they may just have the magic touch, some people do when it comes to icing edges perfectly.

old fashion buttercream could be a meringue or icing sugar. if its meringue, u cant use a paper towel or the melvira method
