I made a 12 and 8 rounds. used a total 1.7kg of ganache. 2kg should be ok for you i guess. I applied quite a thick layer (no sandwiching, only top and sides) after applying it , ikept it overnight and covered it in fondant the next morning. I did brush a bit of sugar syrup before putting the fondant. hope this helps. Should ganache remain, dont worry keep it in the freezer. Mine is two months old and i am still using it. good luck
