i struggle to think of good non perishable fillings for fondant covered cakes. what are some of your faves? Also, does ganache need to be refrigerated? I thought i heard somewhere it didnt but its made with cream so you'd think it does. thanks!
Ganache does not need refrigeration. I try to convince all my customers to have ganache, white or chocolate, under the fondant. It makes a perfect undercoating, easy to make and use.
