Does anyone know what the designers use on Ace of Cakes for the figures? I was wondering if it was chocolate clay, gum paste, fondant or what?

I watch them all the time and I have seen them use modeling chocolate.

They use all of the media that you mentioned.

It depends on the type of figure, colors, drying time, client/decorator preference, temperature, humidity, etc.
