Hi, yes, I use it to cover my fruit cake as well as other cakes. Traditionaly it used to cover fruit cakes. But I have never used royal icing. There are few videos on Youtube but haven't found anything really good. But here is one on covering a cake with marzipan. Here she uses jam on the cake, but I use apricot glaze.
Also there are videos on modeling with marzipan.
I also use it to cover fruit cakes especially at Christmas as they are the only cakes I sometimes use royal icing on. There is an art form to covering with royal icing it has to go on in thin layers and can take days to cover an dget smooth. It also dries really hard and crunchy and ends up being very sweet. Marzipan also is great for modeling with. You can also add CMC to it to aid the hardening process. I have never tried to make roses with it though as it tends to not roll very thinly.
