I'm a cookier, but want to make some little dice cakes for my bunco group. I've found a muffin pan, but in square shapes, and plan to cover them in RBC, something I use often on cookies. How far in advance can I bake my cakes, and is a box mix okay to use for this?
Thanks in Advance!

I don't bake my cake more than 2 days before hand unless I'm going to freeze it. Your cookies are AWESOME thumbs_up.gif .

I've always had good results from baking ahead of time and freezing them for a day or so. I think it makes my cakes more moist. If you don't plan on freezing them, I usually bake and crumb coat the day before I plan to decorate.

I always bake in advance with the plan to freeze. That said, you can bake at least a week ahead.
