I have been given the task to bake in a huge, three door, gas oven. It does not have racks, but looks more like a pizza oven. Can you bake in this?

I am a newbie, so I can not be much of help, but I wish I had one of those ovens, nothing huge, just a normal size one door stone oven, to bake some bread.

Yes you can bake in it. Use an oven thermometer to get an accurate temperature.
This goes on the inside of the oven.

Thanks guys. Hubby found info for me online. He had brought up the question of heat not being able to flow under the cake pan, but apparently these commercial ovens are what you use in a bakery. Duh...
