What kind of icing does everyone use for a coconut based cake? I was going to make a WASC cake with a touch of coconut LoRann and cover in toasted coconut....but I am really stuck as for what icing to use? I can't stand the taste of coconut otherwise I would taste ![]()
I'd say coconut.
I also like pineapple with coconut, or even chocolate, think Mounds bars.
Another thought would be like what you put on an Italian Cream Cake, the cream cheese icing with pecans and coconut.
