Hello everyone!
I have a question icon_smile.gif I just moved to Peru a few months ago and I can't find meringue powder or powder egg whites. I don't believe they sell it here. I've been doing my buttercream with real egg whites. So the question is...How long does buttercream with egg whites stays good for?

I do refrigerate de buttercream, but once is covered with fondant does it stay good being at room temperature? I know that fondant seals everything but with real buttercream I don't know if I should put the whole thing in the fridge.

What about cupcakes? Do they have to go in the fridge too?

It ended up being more than one question ooops... Any help will be really appreciated icon_smile.gif
