"the wilton way of cake decorationg, volume 3". it's an older book circa 1970 but it has fantastic information/photos of what all the tubes can do.
you should be able to find it on amazon or ebay for under $20 though sometimes the amazon sellers list it at $50-70 (avoid those, lol) or perhaps your library carries it.
volume 2 of this series is all about piping flowers which is a pretty cool book also.
