Depends on the one you use.
The Wilton dries pretty fast
Satin Ice requires longer time to dry
Bakels....never dries 
Tylose, dries pretty fast and it's my favorite.
When you are working with anything that has to do with gumpaste is best to give you a few days of dry time. The longer the stronger it will be.

I use the wilton simply because it dries fast but not too fast for me to be able to mould what I need to out of it. Thin petals are dry in a couple of hours and rock hard overnight.
