Question....for those of you who are serious cakers or doing mainly weddings....if I purchased 2 silver plateaus to rent to clients, what size do you suggest to begin with? I am thinking 1 round and 1 square in an 18inch? I would build more as time progresses, but to start out with would the 18 inch be sufficient for most brides?
Any suggestions would be greatly appreciated!!

I'd go with a 16" round and a 14" square myself.....but that's just because most of my wedding cakes serve about 100 slices and are three-tiered 6"/9"/12".
I think 18" is pretty large...especially for the square cakes.
