Once I have chilled the cakes, torted, filled, and frosted the cakes... and then I cover them in fondant... can I then store them in the fridge till ready to leave to deliver? They're only going to have a border around it in frosting but no other design since there are going to be flowers between each cake.

Unless you have a perishable filling inside the cake there is NO reason at all to refrigerate it. Refrigeration dries out cake - it's a relative humidity thing.

I have never had it dry out my cake but the filling is perishable.
So... is there an issue refrigerating the cake once the fondant is one it that I should be aware of? Any pointers?
