Has anyone multiplied Sugar Shacks icing and made it in a 20qt. Hobart Mixer. Need help!!!!!!
I multiplied her recipe by 4 and when I mixed it in my Hobart it tasted like the shortening (not enough Powdered Sugar and I know I added the right amount). So I added more sugar and when I got it to what I thought it was the right sweetness I stopped. Then when I put it on my cake I could not use the diamond pattern on it, it was to sticky (it was in the fridge overnight). I have never had these problems with a single recipe. Also there was to much air when mixing but if I would have added another recipe it would have came out the top of my mixer.
Someone please help!!!! I love this recipe and we bought the mixer just for icing.

Yes we do use Sweetex. I will try but I believe she just uses a 5qt. mixer.

well, doing the recipe x4 might not work cuz the shape of the bowl has an impact too. I have one friend who adjusted it to a big mixer years ago; let me see if I can contact her.

Have never made the 15qt recipe but do make the 10qt all the time...
just divided the recipe by half to get the 15qt recipe...hope it works out!

this is what I have for 15quarts...
15c hi-ratio
2 1/4 cup coffeemate liquid
15lbs powdered sugar
3/4 cup cornstarch (if needed)
**coffeemate liquid:
1 cup coffeemate powder plus hot water to equal 1 1/2 cup liquid, then add 3/4
cup of extracts

Here's the recipe for 10qt.
5lbs hi-ratio (10 cups)
1 1/2 cup coffeemate liquid
5 bags of powdered sugar (10lbs)
1/2 cup cornstarch (if needed)
***coffeemate liquid:
2/3 cup coffeemate powder plus hot water to equal 1 cup liquid, then add 1/2 cup
of extracts ( 1/2 cup of extracts (8 tsp of vanilla, 8 tsp butter & 8 tsp creme bouquet).
