Using Fresh Flowers On A Cake?

Hi! I would like to use fresh Iris on a cake for my sister in law. Any special instructions to do so or do I just make sure they are dry and clean and stick them in? Thanks!

Organic you don't want pesticides on the cake.

Flower picks are available through your florist or on line.
