there is probably a thread answering this question but i can't find it right now. 
can you freeze gingerbread cookie dough? i want to get a lot of bathches made for now and then when i have time in a couple of weeks i will start all my baking.

Yep freezing is fine. You can even freeze your dough already cutout and then just place on cookie sheet and bake.
