Can I Cover A Red Velvet Cake With Fondant

I would like to know if I can cover a red velvet cake with fondant after icing it with cream cheese & will it taste good? And would also like to know which is a good vanilla cake recipe that is not dry icon_biggrin.gif

you can certainly cover a rv cake with fondant. I don't use cream cheese icing to ice the cake, only for filling.. I personally find the flavor of the cc icing I like to be too soft and translucent for decorating, so I fill with cream cheese and ice with buttercream then cover with fondant.

that's not to say it can't be done though.

There is a really good cream cheese icing recipe on here. I believe it's called Decorator's cream cheese frosting. It has crisco in it and is really nice. I use it for my carrot cupcakes and it holds up well. It would also be great with RV cake.
