I have seen several recipes that I would like to try but I do not know what
princess emulsion is. Is there something else that could be used instead that would compare to princess emulsion?

Princess emulsion is made by Lorann oils. They carry it at Hobby Lobby. It's a blend of flavors with a strong citrus taste. You can substitute Creme Bouquet if you can get that (at the cake decorating shop) or a combination of vanilla, lemon and almond extracts.
