I'm using choco-pan for the first time on a 3 tier engagement cake , and I was wondering can I put the cake in the frige when I cover it wirh the chocopan or does it have to just stay in a cool place. I would appreciate any advice,

Depends on your fillings. If they're perishable, they need refrigeration.
Fondant sweats when it comes out of refrigetation. Condensation builds and can make your cake colors run.

I have refrigerated fondant cakes with no problem, but then my frig is a frost free, which has a drier air circulating in it, so I get no condensation.

If your fillings are stable and need no refigeration, then I would just put them in a cool dry place
