do you think it would be okay to stack three 12 x 2 square layers and just use dowels for support? Do I have to use cardboards or will just dowels be okay?

Are you putting another tier on top?..If you are not, I think you can do it withouth it as long as you have a
strong cake..

I just put one large plastic Wilton dowel in the center of a HUGE 12" round x 6" tall, made of 2 torted very fat and very heavy and dense cakes. It kept it in place just fine. I would use a few thin wooden dowels on you're square, as long as the cakes have setteled and been leveled.

You are not stacking tiers are you?

no nothing on top it is just a cube cake

If it's a strong cake, you should be ok. I done it before.
