I am baking a batch of cupcakes today for a gathering on Thursday and I do not want them to get hard. Please let me know your thoughts.
Freeze them! It will freeze the freshness in. Cupcakes don't take long to thaw and they will be just like they were freshly baked!
do I have to wrap them?
I put them on a rectangular cake board, put a sheet of waxed paper across the top of them, then inside a large ziploc bag.
You could ice them then freeze them, that way you dont' have to mess w/ the wax paper.
