What size / shape cake do I need do If I want to do a pumpkin cake (if I am not using a pan). How would I carve it and how would I make sure that it doesn't roll over at the base?

You can use two bundt cakes, inverting one on top of the other, then trimming the sharper edges down to make the soft curves of the pumpkin.

I have a bundt tin but what do I put in the hole and how would I cover it with fondant?

Bake 4 standard sized cupcakes. They can be used to fill the hole.
