I don't think you can make your own isomalt since it is a modified sugar.

You do NOT need to add water to the isomalt in order to heat it up.
Just heat it up dry 1 kg at a time on medium high heat. It should take 30 minutes.
DO NOT combine Isomalt and regular sugar, it's a waste.
