I'm an in home baker & have a question. When you are baking a cake that is 10 inches or less, do you put both cakes in the oven on the top rack? I have recently discovered that the center of the oven gives more evenly distributed heat than the sides. Do you put your cakes on the top & middle racks or the top rack only?

I do the same thing. I usually use both racks and rotate and switch the cakes around half way through. ![]()
