I see all of these beautiful fondant covered cakes in bright colors. How do people achieve this?

They color it. I airbrush it when it needs to be super bright, but I don't want people walking around with neon colored mouths from dye overload.

You can also buy the fondant pre-colored, really easy for the bright colors and can be adjusted with white fondant or color paste.
