I'm pretty sure that you can paint silver luster dust over crusted buttercream....let's see what the pros have to say though!

the best way is with an airbrush!
or colour it grey, let it crust, then dust with silver lustre dust. you can mix the dust with alcohol to make a aint, but im nto sure how well that tends to work.

Thanks to you both. I don't have an airbrush, so I think I'll try both ways and see what's best. I'm working on a wedding cake for next week, so I'll let you know which way worked best.
