Freezing Cake

So I am teaching a basic cake decorating class in two weeks, and I want to make the cakes ahead of time, I have never frozen a cake, and heard you can, I am guessing you double wrap them, but how far ahead of time should I take them out to thaw? And should I thaw them in the fridge or on the counter?

I take them out of the freezer the night before & thaw them on the counter with the wrapping.
