does anyone have a recipe for clear candy? I want to make my best friend a wine bucket cake .... I have tried hard candy but its turning yellow .. help

There's been many discussions on this. It's the heat that turns it yellow but I've never been able to get it clear and I've tried and tried again. There's been suggestions to use isomalt but I've never done it - YET! Hopefully someone will be able to help you.

I saw on Cake Boss where he wanted boiling water effect but it would work for I ce as well.... He heated up some Isomalt and then poured it over some ice in a cookie sheet when the isomalt cooled he picked it up and used the hardened Isomalt it looked GREAT! icon_smile.gif
