This is a great way to level the top of your cake. I ususally let it sit a few minutes in the pan and then slice off the top with an 11" serrated knife.
Make sure you put a little extra batter in the pan so that it will dome on the top. This makes it a little easier to cut the whole top off and gives you or someone in your house a yummy warm cake scrap to nipple on.
